Anyone who knows me well enough knows I am the fussiest eater on this planet. Jill definitely knew this about me. I do not like vegetables (besides from potato) š² nor do I like salads š± I don't think I can blame Jill for this one, as it was not on Jill's original list, so Anna & Tessa's inspiration for this must have come from Jill's sister Megan, the original list maker. I thought this one would be a challenge for me, but actually it wasn't too hard at all. I'm currently doing Invisalign to close some gaps in my teeth, so I'm not eating too much throughout the day, not that I really ate much meat during the day in any case, so I really only needed to worry about dinner. So, if I couldn't have meat, I needed to trick my brain into thinking I was eating meat, so I picked up some plant-based meat. Essentially products made from Soy, that somehow, taste and cook like meat. And they were actually quite good. I think Jill would be so impressed with me on this one.
This is what had for dinner for the 7 days:
ā Day 1 - Sausages (Plant Based) & Mash
ā Day 2 - Chicken Tenders (Plant Based) & Roast Potatoes
ā Day 3 - Rissoles (Plant Based) & Mash
ā Day 4 - Scrambled Eggs on Toast
ā Day 5 - Chicken (Plant Based), Cheese & Avo Wrap
ā Day 6 - Homemade Beef (Plant Based) Pie
ā Day 7 - Sausages & Chips
Is it a coincidence that the same week I went vegetarian was the same week that my cat caught a bird? Must be the universe balancing itself out.
