I chose to incorporate a Raspberry Vodka Jello shot because I always recall having jello shots at Jill's 18th Birthday party at her family home in Yeppoon. When Jill came to visit me one time when I was living on the Gold Coast, we had a fun night out on the town where she introduced me to Wet Pussy Shots. So, I chose the Pals Vodka, Red Peach, Yuzu & Soda for the peach aspect as I was too cheap to spring for a bottle of Peach Schnapps. Although what might seem an odd choice to include in a cocktail, I chose to include Oyster Bay Sauvignon Blanc as it was one of Jill's favourite wines. I topped this off with some raspberry strawberries, served in my pretty flamingo glass.

I debut my cocktail on a zoom meeting with Anna & Tess for a Jill Day cheers at 9pm 19th September. It looked pretty and surprisingly it actually tasted better than expected. I called it 'Jill's Evolution' because I feel it captures the evolution of her drinking throughout her years. From fun jello shots, to cheeky wet pussy shots to her more refined wine palette.
